Vegetable macaroni recipe. In this recipe, we are going to obtain a healthy dish thanks to the vegetables that have a lead role along with the macaroni. The pasta and vegetables will be accompanied with a sauce, and the combination of all of these ingredients will result in a very tasty dish. Lets see how to prepare this vegetable macaroni.

INGREDIENTS for 4 people

  • 7 oz of macaroni
  • 1 middle-sized zucchini
  • 1 green pepper
  • 2 tomatoes
  • 1 onion
  • 1 garlic clove
  • 3 fl oz of tomato sauce
  • 1 tsp of oregano
  • 1 tsp of thyme
  • Grated cured cheese
  • Salt and pepper
  • Oil


Time needed: 40 minutes.

You only have to follow the next steps to obtain these delicious vegetable macaroni:

  1. First, start to prepare the stir-fry

    In a pan put a little oil jet and heat it over high heat. When it is hot, add the zucchini, the green pepper and the onion, previously cut them in bite-sized cubes. Then, aggregate a pinch of salt and let them cook for 3 minutes, until they get a bit browned.

  2. Aggregate the garlic and the tomatoes

    After that time, cook the stir-fry over medium heat. Add the garlic and the tomatoes, all well-chopped. Season them and aggregate the spices. Let all cook for 15 minutes, stirring them from time to time.

  3. Add the tomato sauce with the rest of ingredients

    Afterwards, add the tomate sauce. This sauce will give to our vegetable macaroni an special flavour. Mix the ingredients again, and cook them for 5 minutes. After that, put them on a plate.

  4. Cook the macaroni pasta

    Once the stir-fry is made, in a casserole with plenty of water we are going to add a pinch of salt. Let it bring to the boil, and then aggregate the pasta. Stir the macaroni frequently to avoid it to stick at the bottom of the casserole. Let it cook for about 12 minutes. When it is “al dente”, remove them from the heat. Reserve some ladles of cooking broth and then, drain the pasta from rest of the water.

  5. Finally, place the macaroni to the stir-fry

    Add the pasta to the pan where the stir-fry is, and pour the content of the glass of the previous step. Mix the vegetable macaroni with the sauce and let all cook for about 5 minutes. Later, remove them from the heat and serve them on a plate. Lastly, sprinkle the grated cured cheese over it to give to this dish a delicious touch.
