Time needed: 20 minutes.

Here you have the steps to get the crepes with spinach and prawns

  1. First, cook the spinach.

In a big casserole with plenty of water add a little pinch of salt. Cook it over high heat and when it starts to boil, add the spinach. Stir them while the spinach is cooked for about 3 or 4 minutes. After that time, remove them from the water and place them in a bowl with plenty of cold water. After a little time drain them from the water.

  2. Prepare the garlic cloves.

In a pan put a little oil jet and cook it over medium heat. When it is hot, add the well-chopped garlic cloves and cook them for about 2 minutes, without turning brown.

  3. Add the prawns.

After that time, aggregate the peeled and chopped prawns, and the spinach leaves that you had cooked previously. We are going to cook all for about 2 minutes and then, pour the sour cream. Cook all again for about 10 minutes until the mixture gets more thick. Remove it from the heat.

  4. Prepare the dough of the crepes.

In a beaker, put the egg, the flour and the milk. Add the fresh parsley previously chopped and season it. Later, beat them well until you obtain an homogeneous liquid dough.

  5. Cook the crepes.

Put in a non-stick pan some of butter and melt it over medium heat. Then, put on it the dough of the crepes. Cook it for about 1 minute, and then turn around it. If it sticks, you can unstick it with a flat spoon. Cook the other side of the crepe for another minute and place it on a plate.

  6. Stuff the crepes with the mixture of spinach and prawns.

When all the crepes are made, fill them with the stuff you have previously prepared. Close and put them on a plate. Finally, serve them and accompany our stuffed crepes with spinach and prawns with some gasnish.
