Lets see how to make this stew chicken with vegetables in few steps.

 

STEW CHICKEN WITH VEGETABLES

INGREDIENTS for 4 people:

  • An entire chicken or 6 thighs
  • 1 onion
  • 2 garlic cloves
  • 1 green pepper
  • 1 red pepper
  • 7 oz. crushed tomato
  • 1 o 2 bay leaves
  • Chopped fresh parsley
  • 1/2 cup of white wine
  • 34 fl oz. of chicken broth
  • Oil
  • Salt and pepper

 

STEW CHICKEN WITH VEGETABLES RECIPE:

1.- First of all, if you have an entire chicken, cut it. Remove its breasts and the thighs from the carcass and reserve them on a plate. If you only have the thighs, you do not have to make this step. It is better to make this elaboration with an entire piece, because you can make a chicken broth with its carcass. Covering it with plenty of water and cooking it for about an hour, you will obtain a delicious broth to use later.

2.- Then, season the chicken. In a tall casserole, put an oil jet over high heat. When it is hot, add the chicken and seal it on all their sides. The idea is to brown it on the outside.

3.- When it is browned, remove it from the casserole and lower the heat to low. In this same oil, add the onion, the peppers and the garlic cloves, previously chopped. Season and cook all the ingredients for about 5 minutes over low heat while stirring them frequently.

4.- After that time, add the crushed tomato and the bay leaves and mix them with the rest of ingredients. Let to cook for about 10 minutes.

5.- When tomato will reduce more than half, add the white wine and let to cook all for about 3 minutes more, until its alcohol evaporates.

6.- Now, add again the chicken into the elaboration and mix all well. Then cover them with the chicken broth. If you don´t have chicken broth, you can use water. Let to cook for about 40 minutes more, until chicken is tendered and all the flavours have mixed.

7.- Finally, serve it on a dish with the vegetable garnish. Sprinkle over it with chopped parsley and… ready!
