Spaghetti carbonara. It´s a very tasty recipe. Its sauce is the most international form to prepare this pasta. The autentic italian carbonara sauce contains yolk egg, cheese and bacon. There are many versions to make it. Let´s to see how to make the authentic spaghetti carbonara:
INGREDIENTS for 4 people:
- 14 oz. spaghetti
- 2 eggs
- 5 oz. parmesan cheese
- 4 oz. bacon
- salt and pepper
SPAGHETTI CARBONARA RECIPE:
1.- In plenty of boiling water put a handfull of salt. Then, add the spaghetti and let cook them for about 10 minutes, until the pasta is “al dente”. It is advisable to stir them frequently, especially at the beginning of the cooking, so that they do not stick.
2.- While the pasta are cooking, add the yolks egg in a bowl. You will not need the whites egg but you do not throw them away, it’s better to keep the whites for other dishes. Add the grated cheese and mix both ingredients with a fork until obtain a very dense mass.
3.- Then, in a pan, without any oil and over high heat, put the diced bacon. Two minutes later approximately, when bacon is fried, remove it from the pan and reserve it.
4.- When spaguetti is cooked, keep some ladle of cooking broth and drain the rest of water from them.
5.- Add the spaghetti into the bowl where you previously make the mixture of yolk and cheese and then, add the bacon and a little of the cooking broth. Stir all ingredients with a fork so that the spaghetti absorbs all the sauce. If you see that sauce is too dense, you can add more broth from the cooking, until a creamier sauce has been left.
6.- Finally, serve on a plate and sprinkle with plenty of black pepper.
