INGREDIENTS for 2 people:

  • 7 oz. mushrooms
  • 5 eggs
  • Fresh parsley
  • Salt and pepper
  • Olive oil


1.- In a pan over high heat, put the mushrooms and sauté them for about 2 or 3 minutes, the enough time to cook slightly. Then retire them from the pan and reserve on a plate.

2.- In a bowl put 4 eggs and the yolk of the fifth egg. This extra yolk, will give more creaminess to the elaboration. Now, in a non-stick tall casserole over medium-high heat, pour the eggs without stirring previously.

3.- Now Stir all without stopping any time with a spoon. If you see than the eggs are cooking too much, retire the casserole from the heat without stop stirring any time. When it regains the necessary temperature, return the casserole to the heat again, always without stop stirring.

4.- When eggs start to solidify but they are following creamy, it is the moment to retire the casserole from heat and to add the fungus along with a little of olive oil and a pinch of salt. Stir briefly to integrate all ingredients.

5.- Put the elaboration on a dish inmediately and spread over it some chopped parsley. Serve it hot so as not to lose the flavour of this scrambled.

In this simple way, we have obtained a delicious scrambled mushrooms with a special texture that awakens all the senses.
