SCRAMBLED EGGS WITH COD EASY recipe

Scrambled eggs with cod. Optionally you could add peppers. What it has inside is the least. You can make a scramble of almost anything. The important thing is its technique.   • 5 eggs
  • 2 oz of desalted cod
  • chopped parsley

Time needed: 15 minutes.

For making this delicious recipe of scrambled eggs with cod, you only follow this simple steps:

  1. First, take the eggs

    Of the 5 eggs, put 4 on a plate and ONLY the yolk of 5. This last yolk will give an extra creaminess. Beat well, without adding salt

  2. To continue, add them to a casserole

    It needs to be a high casserole (no frying pan or flat container) and if possible it is not non-stick. Then add this beaten dough. Put it over a medium-high heat and, with a wooden spoon, stir vigorously without stopping. If you see that it loses a lot of heat, remove it from the fire, stirring it all the time. When it returns to a suitable temperature, return it to the heat.

  3. At this point, keep beating it

    After a couple of minutes, repeat this technique. And, without stopping stirring at any time, you will see that it begins to thicken. At the end, it should be curdled, but you will also see part of the yolk still not completely curdled. You are not looking to make a broken omelette, but a creamy stir.

  4. Finally, put the scramble with the cod

    At the previous point, remove it from the heat, and add the cod. Now add its part of salt and a small splash of oil, which will give it the final touch. Mix it a little to integrate all the ingredients and put everything immediately on a plate. If the scramble, when adding it, goes down a little but immediately stops doing it, it will be ready. If it falls into its full, that means you have passed the cooking point. And if it expands too quickly on the dish, it will be raw. Look for the intermediate point
