Salmon green sauce. It´s not the typical fish recipe with green sauce in which we use a hake as a principal ingredient. In this ocassion we are going to make it with salmon, a healthy and tasty fish. Salmon blends very well with this sauce. Let´s going to see how to make this salmon green sauce!
INGREDIENTS for 4 people:
- 1 entire salmon loin
- 4 garlic cloves
- 200ml/ 7 fl oz. white wine
- 1 tbsp flour
- 100g/ 3.5 oz. clams
- 100g/ 3.5 oz. green peas
- Fresh parsley
- Salt and pepper
SALMON GREEN SAUCE RECIPE:
1.- Clean and cut the salmon loin in 4 pieces with the same size. Season it.
2.- In a big pan, put a little of oil over high heat. When oil is hot add the salmon loins. Lets to cook it for about 2 minutes. Turn around each loin and then, cook the other side another 2 minutes more. Then place them on a dish.
3.- Reduce the heat to medium and in the same pan, put a generous quantity of oil. Add chopped garlic cloves along with a good amount of parsley prevously chopped too. Let it to cook for about 3 minutes, stirring all frequently with a spoon.
4.- After that time, add the white wine. Let to boil it for about 2 minutes and stir again all. In this process, the wine will have lost all it’s alcohol.
5.- Now, add the flour and stir all well until flour integrate with the rest of ingredients. Put a pinch of salt and let to cook for about 2 minutes more stirring frequently. Then, add some water until obtains a fine sauce.
6.- When the sauce is done, add the green peas along with the salmon loins. Put a pinch of salt and let cook all for about 5 minutes over low heat.
7.- Then, add the clams and let cook for about 5 minutes more over low heat. Add salt if necessary and serve it on a dish. Finally, decorate it with a little of fresh parsley… and ready!
