INGREDIENTS for pasta salad recipe for 2 people:

  • 7 oz of thin macaroni
  • 2 cans of tuna
  • 1/2 red pepper
  • 1 carrot
  • A handful of pitted olives
  • 3 eggs (one egg for make the mayonnaise)
  • 6.5 fl. oz. oil
  • The juice of half lemon
  • 3.5 oz of cured cheese
  • Dried oregano
  • Salt


Time needed: 25 minutes.

Make this pasta salad recipe is very easy to make if you follow this simple steps:

  1. Make a homemade mayonnaise with cheese flavour.

    At first, put the egg in a tall glass and add a pinch of salt. You can replace the egg for 3fl. oz milk. Add 6.5fl.oz oil, put the blender to the bottom of the glass and beat all ingredients for about 10 seconds, until the sound of the shake changes. Lift the blender a little while beating for about 5 seconds more. Then, raise and lower the blender without fear of separating the mayonnaise. When the mayonnaise is made, add the cheese prevously grated and beat all again. Remove the blender from the glass. Finally, add the juice of a half lemon and mix all ingrediets again with a spoon.

  2. Cook the eggs

    Then, in a casserole with plenty of water, put the rest of the eggs with a pinch of salt. Bring to the boil and let to cook them for about 10 minutes. Remove the eggs from the casserole and reserve them on a plate.

  3. Then, cook the pasta

    In this same water, we are going to cook the pasta. Remember you have to stir it, especially the first minutes of the cooking. In this way, pasta wont be stick at the bottom of the casserole. Afterwards, remove the pasta from the watter and reserve it on a plate until it is completely warm.

  4. Cut the vegetables

    Meanwhile, in other plate, cut in diced the red peppers and also grate de carrot. Reserve them too for later.

  5. Finish to prepare the pasta salad recipe

    Made this, in a bowl put the pasta. Over it, add the tuna, the grated carrot, the red pepper and some tbsp of the mayonnaise. Finally, sprinkle all with dried oregano and serve it immediately.
