No oven meat lasagna. It´s a very typical Italian recipe. In this occasion we will cook it without oven.

No oven meat lasagna. Of my travel to Italy in 2019, the thing than more impresed me were the lasagna, wich were not very cooked in the oven. It only was gratined. Italian chefs only heat it in the oven before to serve it. In this ocassion, we are going to make a meat lasagna without to use a oven. It´s a simple and quick form to make this elaboration. This is the no oven meat lasagna recipe.


INGREDIENTS for 4 people:

  • 8 wafers of lasagna
  • 35 oz. mince meat of pig and beef mixture
  • 2 onions
  • 2 carrots
  • 1 celery stick
  • 10.5 oz. crushed tomato
  • 1 cup of  white or red wine
  • 1/2 cup of milk
  • 7 oz of bacon
  • 17 fl oz. homemade bechamel sauce 
  • 2 tsp of tomato sauce
  • 1 tsp of dry oregano
  • 1/2 tsp of dry rosemary
  • 1 tsp chopped fresh parsley
  • Salt and pepper
  • Oil


1.- First of all, we are going to cook the lasagna wafers. In a casserole with plenty of boiling water, put a handfull of salt. Introduce in it the lasagna wafers in small batches and cook them for about 5-7 minutes while stirring occasionally, so the wafers don´t stick together. When they are cooked, remove them from the water and let to rest them over paper towel.

2.- In a pan over high heat, put the bacon previously cut into cubes. Cook it for about a pair of minutes until bacon is browned. Then, remove it from the pan and reserve it on a plate leaving its grease in the pan.

3.- Lower the heat to medium and in the same pan, add the onion, carrot and the celery stick previously chopped them. Season and with a wooden spoon, stir frequently all ingredients while cooking for about 10 minutes.

4.- After that time, add the mince meat. Season and stir to integrate all ingredients while smashing the meat with the spoon. Cook them 2 or 3 minutes more until meat looses raw colour.

5.- Now, add the crushed tomato. Stir again to integrate the ingredients and let to cook for about 5 minutes more.

6.- Then, put the white wine (You can add red wine if you prefer). Add also the milk, oregano, rosemary and the chopped parsley. Introduce the bacon and stir all the ingredients to integrate them again. Let to simmer them for about 40 minutes.

7.- Once this is done, at the bottom of another pan, put some spoon of tomato sauce. Extend it on the surface of the pan and above it put a layer of wafers. Above them, put some of the meat sauce and above it, put some bechamel sauce (In Italy people add few sauce, less quantity than in other countries). Finally, finish with other layer of wafers. Repeat this step until to form 3 floors in total.

8.- Over the last layer, put more meat sauce. (Normally, we finish the lasagne putting with a wafers layer, but in Italy, people finish this elaboration with meat sauce) Over it, put a little of bechamel sauce and cover the pan to cook the lasagna over low heat for about 5 minutos. When lasagna is warm, retire it from the pan and serve it.

If you want, you can prepare this lasagna in the oven, but I remember that no lasagna that I ate there were gratined. For that, this no oven meat lasagna is a great recipe for people that don´t want o don´t have a oven.
