Macaroni carbonara. The original recipe. Carbonara is a traditional Italian sauce very easy to make. Although the most usual is to use it with spaghetti, in this occasion, we are going to use macaroni. For making this carbonara, we will employ just egg and cheese.
INGREDIENTS for 4 people:
- 14 oz. macaroni
- 4 egg yolks
- 7 oz. grated Parmesan cheese
- 7 oz. bacon
- Salt and pepper
MACARONI CARBONARA RECIPE:
1.- In a casserole with boiling plenty of water, put the macaroni and a handfull of salt. Cook them over medium heat while stirring frequently for about 12 minutes. In this way, macaroni won´t stick to the bottom of casserole.
2.- Meanwhile, we are going to prepare de carbonara sauce. In a pan over high heat put the bacon previously cut into cubes and fry them for about 2 minutes. While bacon frying, it will release some fat and that we will use after.
3.- Now in a bowl, put the egg yolks and the grated cheese. Mix both ingredients with a fork until obtain an orange paste.
4.- When macaroni is “al dente”, drain them from the water, keeping a cup of the cooking broth. Then, introduce the macaroni in the bowl where we had prepared the Carbonara. Also add the bacon and its fat and mix all the ingredients.
5.- If you believe the Carbonara is dry, add a little of the cooking broth and stir again. Place in plate and sprinkle with freshly ground black pepper. Serve it immediately.
