BAKED VEGETABLE SKEWERS
Grilled vegetable skewers. Usually, skewers were made of meat. In this occasion we are going to make some grilled vegetable skewers. More healthy and with less calories. It’s a very tasty and easy appetizer to make. Before we baked them, we are going to add a sauce elaborated with honey and mustard. It’s a little intense flavour, but it gives to the skewers a special touch. If you want proving this appetizer, make these baked vegetable kabobs in a easy form.
INGREDIENTS for 4 people
- 7 oz of mushrooms
- 1 zucchini
- 2 spring onions
- 7 oz of cherry tomatoes
- 1 lemon
- 2 garlic cloves
- 1 little handful of fresh parsley
- 2 tbsp of honey
- 2 tbsp of mustard
- Salt and pepper
- Skewer sticks
HOW TO MAKE GRILLED VEGETABLE KABOBS
Time needed: 30 minutes.
Now we are going to see how to prepare these delicious baked vegetable skewers, in a very few minutes.
- First, we are going to prepare the sauce for the skewers.
In a bowl, put the garlic and parsley well-chopped. Crush them until they are completely undone. Then, aggregate the oil, the honey and the mustard sauce. Mix them until obtain an homogeneous sauce.
- Cut the vegetables and thread them in the skewer sticks.
Afterwards, cut the spring onions and the zucchini both in a medium pieces. Later, put the different vegetables in each stick until you complete the skewers.
- Finally, dress the skewers with the sauce with honey and mustard, and baked them.
When you finish with the skewers, with a pastry brush them with the sauce that you made in the first step. Put them on a oven rack and introduce it in the oven preheated over 386ºF. Let the skewers cooked for 20 minutes, until they get browned. And then… You can already serve them!
