FRIED MILK RECIPE

 

Fried milk. A traditional Spanish recipe. Milk is the most important ingredient for this elaboration. It is very easy to make although it involves some work. If you follow this steps, you will obtain a creamy dessert. Let to see how to make this fried milk recipe.

 

INGREDIENTS for fried milk recipe for 2 people:

 

  • 500ml/ 17 fl oz milk
  • 200ml/ 7 fl oz. milk + 80g/ 3 oz. cornflour
  • peels of lemon and orange
  • 1 cinnamon stick
  • 3 egg yolks
  • 100g/ 3.5 oz. sugar
  • 1 vanilla
  • 20g/ 1 oz. butter
  • Flour
  • Eggs
  • 75g/ 2.5 oz sugar and 1 tsp of ground cinnamon for a final coat.
  • Oil

 

FRIED MILK RECIPE:

 

1.- In a casserole over medium heat put the 500 ml/ 17 fl oz. of milk. Also add the cinnamon stick, some peels of lemon and orange (quantity to taste), the vanilla stick opened by the middle with its seeds and butter. Let to cook until it get to boil. Then, turn off the heat and cover the casserole. Let to infuse for about 30 minutes.

2.- Meanwhile, in a bowl put the egg yolks and the sugar. Beat with a whisk until the eggs skim. Then, in a glass, add the 200 ml/7 fl oz. of milk mixed with cornflour, beat with a fork both ingredients until the lumps disappear. Place this mixture over eggs and sugar mixture and beat all ingredients again to obtain a homogeneous mass.

3.- Retire the peels and the cinammon and vanilla sticks from the infused milk. Cook milk over medium heat and add the previous mixture. Stir all with the whisk for about 2 minutes while we observing how the mixture begins to thicken.

4.- Then, in a mold previously buttered put this mixture. Cover the mold with transparent paper, the papel has to come in contact with milk. Let to cold some minutes at room temperature. When mixture is warm, place the mold into the frigde during a whole night.

5.- After that time, retire the mold from the frigde and carefully cut the mixture into cubes for about 3 or 5 cm side.. Coat each piece of flour and beated egg and finnaly fry them in a plenty of oil for about 2 minutes.

6.- When pieces are browned, retire them from the oil and put each piece in paper towel for about 2 minutes to eliminate the excess of oil. Meanwhile on a dish, put 75g/ 2.5 oz. of sugar and a teaspoon of ground cinnamon. Mix all ingredients and coat each piece with them. Serve on a dish.

 

As you can see, this fried milk recipe is a little laborious, but in the end is worth it. It is very delicious! Try to make it at your home!
