INGREDIENTS for 6 people:

  • 2 medium broccoli
  • 3 medium carrots
  • 1 onion
  • 1 garlic clove
  • 3 oz. of butter
  • 2 tbsp of flour
  • 25 fl oz. of vegetable broth
  • 8 fl oz. of sour cream
  • 9 oz. cured cheese or semi-cured cheese
  • Fresh parsley
  • Salt and pepper


Time needed: 1 hour.

To prepare this delicious broccoli cheese soup recipe, you only follow this simple steps:

  1. Cook the onion and the garlic clove

    In a casserole, add one oz. of butter. When it has undone, add the onion and the garlic clove. These ingredients will be well chopped. Add also a pinch of salt. Then, mix all the ingredients and let to cook them for about 10 minutes, stirring all frequently. After that time, remove the casserole from the fire and reserve it for later.

  2. Now, toast the flour

    In other large casserole, put the rest of butter and heat it over medium heat until it has undone again. Made this, add the flour and stir it with a whisk. Let to toast the flour for about 2 or 3 minutes while stirring it frequently.

  3. Add the vegetable broth and the sour cream to finish make the broccoli cheese soup recipe

    Then, add the vegetable broth. But we are going to add this broth into batches to prevent the lumps. Pour a cup of broth and stir it. You will obtain a thick mass. Keep adding other cup of broth and stir all again. The sauce will start to lose thickness. Finally, add the rest of the broth and the sour cream. Mix them well until all the ingredients are integrated.

  4. Put the onion stir-fry and the rest of ingredients.

    Now, add the onion stir-fry that we had been reserve before. Also, put the parsley, the carrot and the broccoli. All this ingredients will be well chopped. Season and stir all again. Then, let to cook for about 20 minutes while stirring occasionaly.

  5. Crush the cream and add the grated cheese.

    After that time, put the cream in a blender and crush it until you obtain a thin cream. Then, return it to the casserole and add the grated cheese. Stir all the ingredients until cheese undone completely.

  6. Add more sour cream or vegetable broth if you want, until broccoli cheese soup recipe will be to your taste.
