Bonito with tomato. In this ocassion, we are going to make a fish recipe very juicy and delicious. Furthermore, we use the fish bones and skins for preparing a broth that will give an extra flavour to the recipe. For making this bonito with tomato, you only need this ingredients.
BONITO WITH TOMATO
INGREDIENTS for 4 people:
- 4 slices of bonito
- 50 oz. crushed tomato
- 2 onions
- 2 garlic cloves
- Dried rosemary
- 1 cup of white wine
- Salt and pepper
BONITO WITH TOMATO RECIPE:
1.- First of all, we are going to clean the bonito slices. With a knife, retire the backbone and the outer skin of each slice. We will obtain 4 bonito fillets from each slices.
2.- In a casserole over low heat, introduce this fish skins and bones. Then, add the right amount of water to cover them. Let to cook for about 20 minutes.
3.- In a pan over high heat, put a little of oil. We are going to seal the bonito fillets. Cook for about a minute and turn around them. The idea is to brown them outside but keeping raw inside. Afterwards, cook this another side other minute more and then retire the fillet from the pan and reserve on a dish.
4.- Now, lower the heat to medium and add chopped garlic cloves. Cook them for about 2 minutes while stirring. In this way, they will aromatice oil with its flavour.
5.- Then, add the onion previously cut in fine strips. Season and cook for about 15 minutes while stirring frequently.
6.- After that time, put the crushed tomato and some rosemary (this spice will give an extra flavour to the elaboration). Mix all ingredients and let to cook for about 15 minutes more over medium heat.
7.- When tomato has lost almost all its water, add the white wine. Then, raise the heat to high and cook for about 2 minutes to evaporate the alcohol.
8.- Finally, lower the heat again to medium and put the cooking broth previously drained from the fish skins and bones. Add the bonito fillets and mix all ingredients a little. Let to cook only 5 minutes more and serve it immediately.
With this simple steps we will obtain a delicious bonito with tomato. A dish that never disappoints!
